The sweetest dessert trend around: Corn?

Corn seems to have been as the center of our diets since before the Mayflower and then again with industrial agriculture but not until recently has corn been served post meatloaf and mashed potatoes. One of the newest food trends around has caused a few raised eyebrows; corn based desserts such as Sweet Corn Ice Cream, Corn Crepes, Panna Cotta and even Sweet Corn Pudding.
There are four colors of corn; yellow, white, bi-color and multi-color, all of which can be used in a corn based dessert. Sweet Corn is the oldest type and is being leveraged the heaviest for corn dessert creations by culinary experts and soccer moms alike. Undoubtedly, as the demographic profile of US consumers diversifies’ food trends, flavor profiles and application techniques will metamorphosize. We have seen the impact of cultural diversity on our center plate in the past.
